Kitchen fuels fun at Chicken N Pickle

Chicken N Pickle is a lot of things to a lot of different people. Pickleball paradise. Yard game mecca. Music venue. Sports bar.

And the engine they all run on? The kitchen, naturally, which under executive chef Alex Staab cranks out delicious, fun food at a pace befitting the energetic surroundings.

“One thing a lot of people don’t realize is our food is quick,” general manager Kelsey Rockett said. “Our food comes out within eight to ten minutes of ordering. It’s a great place to pop in and find something to eat fast.”

For lunch, it’s tough to top the 316 Special, offered from 11 a.m. to 3 p.m., Monday through Friday. Ten bucks delivers your choice of sandwich — Pulled Pork, NKC Hot Chicken, Pickled Chicken, Country Fried Chicken or Bill’s Chicken Salad — a nonalcoholic drink and French fries or tater tots. You’ll even be doing a good deed, since $1 of every 316 sale goes to the Wichita public schools’ food program.

“We started it last year,” Rockett said. “We wanted to make sure we were doing something for our schools.”

The special on Wednesday and Thursday is a cheeseburger with a little kick to it. This one features a half pound of ground beef topped with a fried egg, fried onion straws, bacon, jalapeño and sriracha aioli served on a brioche bun. Kansas City Chiefs fans went crazy for the burger when Chicken N Pickle started serving it during games last season.

“It was like, ‘Oh, we’re going to need to bring that back every week,’ ” Rockett said.

Classic street tacos are the draw on Taco Tuesday, with a choice of carne asada topped with cilantro and onion or fried shrimp served with cabbage and chipotle cream. At $2 each, you’ll probably want to try at least one of each.

Many diners order the same things over and over from Chicken N Pickle’s regular menu, hooked on entrees like the fall-off-the-bone ribs or the most popular item of all — hand-breaded fried pickles, made with house-brined pickles.

“We sell fried pickles like crazy,” Rockett said.

Whether diners know it or not, Chicken N Pickle makes almost everything in-house.

“We do try to use the best products available,” Rockett said. “Our meat is antibiotic and hormone free. The beef is grass fed and grass finished. We brine all our own pickles, brine all our own chicken. We try to create food that’s going to taste good and also be good for you.”
